Zucchini contains thiamin, niacin, and pantothenic acid and they are a great source of dietary fiber, protein, vitamin a, vitamin c, vitamin b6, folate, iron, magnesium, phosphorus, potassium, zinc, copper, and manganese. Translation, zucchini (like most vegetables) is a wonderful health food to add to your diet this time of year.
I eat a lot of zucchini with eggs and sauteed with other veggies. A couple weeks ago, I decide to try a new recipe, zucchini pasta, and boy was it delicious. I'm sure many of you have heard that you can make pasta noodles out of zucchini. All you need is a spiralator which seem to be readily available these days.
I sauteed some onions & garlic in ghee and then added the noodles for minute, tossed in some basil pesto, and topped with some cherry tomatoes and a little cheese. My sister said it smelled like Olive Garden in the house (which was a complement) as she enjoyed a big bowl of "pasta" for the first time in years.
